CWA risotto recipe for Debauch!!!

Soz DB, I didn’t email this last nite …. rekindled a brief fling with scotch and coke at the Darlo Bar instead…and indeed it will be a brief fling!

This is the CWA Recipe for Thai Risotto with Tuna and Coriander that was passed down to me from my mum! Handle this with care as if the CWA find out I have revealed one of their recipes I will be force fed Pumpkin Scones and cream or worse Bubble and Squeak until I confess and join their Satanic cult……
But as this will be the only thing of value and significance I will eva be able to pass onto you ENJOY!!!

Thai Risotto with Tuna and Coriander (or chicken/vegies - woteva )

2 cups of Rice
1 can coconut milk (note Globule that I didn’t milk the fish this time!!)
3 cups vege stock
1 can (200 – 250 grams tuna)
1 tbs red Thai curry paste
1 bunch coriander
1 onion (chopped)
1 clove of garlic (chopped)
Oil ---- jest a lil bit!

(bottle of Wine – for u not the risotto)

Fry onion in oil until soft and add garlic. Add curry paste and fry for about 2 mins – (consume first glass of Wine) – add rice and stir until ‘coated’ and sorta transparent.
On medium heat add stock a little at a time stirring as you add (consume second glass of Wine)…keep adding stock until it is almost absorbed. When rice is sorta ¾ cooked add coconut milk and cook a further 5 minutes or until rice is cooked. Whole cooking time is about 25mins….easy peasy!….(finish bottle of Wine)

Take off heat and stir in the tuna and coriander…then serve!!!

If you want to add vegies - add after rice is transparent….if adding chicken rather than tuna – cut into strips part fry first then add when rice is transparent….

Wine consumption is essential….again another CWA tradition!

Actually my mum drinks Sherry whilst making it,,,v funny indeed!

As a 10 year old I took out the Cowra CWA kids cooking divisions for Speedway (orange) cake and Gingerbread men.

I knew that one day on these forums, I would be able to boast of my culinary feats. That day has come.

Not wanting to take anything away from sassy's mum, or heavens preserve us, the CWA, but I would advise boiling the stock before you add it - and keeping it simmering on the stove next to your main pan. You'll cook the rice better - which should always be aborio rice, not longrain.

Bug (who has recently bought her first subscription to a food magazine - <i>such</i> a grownup!) :)
