So. Im a big cheese person. love a good vintage. danish fetta sets me off. i <3 just getting some chunks and stuffing them in my gob. i love eating it on jatz. i love it on san-gers, in salads, on burgers.

One of my all time fave cheeses is the Mersey Valley diddy. so fucken tasty. They have a pretty awesome wasabi one as well that goes quite nicely on a water cracker with some champers too.

I'm also a fan of the Margaret River (wax ones), Tilba (those 3 flavoured ones are awesome) and yea cheeses (mostly the vintage). Fetta cheese is the bomb. oh i could eat kilos of the danish stuff...sooo good. Especially the marinated stuff...mmmmm

^^ ashgrove is fucking awesome... it gets such an outrageous markup in supermarkets on the mainland though :(

The wasabi, smoked chedder & red leicester from them are all phenomenal...

I also love cheese.

Sharp aged cheddars are my favourite though.

i loves me some cheese! i grew up on nimbin cheese (being the hippy child that i am), and even though all the other kids had kraft singles in their sangas i knew i was the lucky one...

i quite often suggest cheese and bikkies (or a good whack of crusty bread) for dinner rather than actually cooking something... cheese on toast is my favourite of all possible favourite foods, and cheese and hot english mustard sandwiches are the best.

white costello, strong cheddar, brie, camembert, and edam are my favourite cheeses. i haven't quite learnt to appreciate blue cheese just yet but i'm sure it'll just take time!

Gorgonzola. amazing cheese, ribbons of blue, soft and gooey goodness and quite possibly gonna name my first born teh same name. GORGONZOLA. It has so much strength to it.

Other fave being boccocini and its universal use through cold salads, cheese spreads and pasta's.

Cheese is definitely an essential part of my diet... I eat some almost every day

figs stuffed with gorgonzola and wrapped with thin slices prosciutto

pizza with goats cheese, pumpkin, pine nuts and semi dried tomatoes

salad with boconcini, roma tomatoes and dollops of fresh pesto

baguette with camembert and quince paste

filo pastry with feta, ricotta and spinach

baked chicken breast stuffed with white Costello and mushrooms

i found this awesome cheese. not sure what brand it it and im too freaken lazy to walk out to the kitchen and look right now, but its in a long black wax cylinder and theres a chilli cheese! :-D Holy shit its good. And i tried the green peppercorn mersey valley stuff...hea-ven!

but nothing does beat some sweet danish fetta and cracked pepper jatz... :drool:

My plan in the coming months is to be a little more daring with my cheese selections and experience varietiest I haven't sampled before. :thumb: Also get back into the old favourites, camebert, brie, jarslberg, edam, fetta, ricotta etc... HOORAY FOR CHEESE!

omg. yay! cheesy thread is back!

i found this awesome cheese. not sure what brand it it and im too freaken lazy to walk out to the kitchen and look right now, but its in a long black wax cylinder and theres a chilli cheese! :-D Holy shit its good. And i tried the green peppercorn mersey valley stuff...hea-ven!

but nothing does beat some sweet danish fetta and cracked pepper jatz... :drool:

Last week I just happen to come across the most amazing goats cheese on Earth.

Its from Meredith Dairy and marinated in olive oil and garlic and herbs.

Its sooo creamy and salty. Tastes amazing with avocados or mushrooms on sourdough for brekky! :drool:

I've been buying cheese lately from the guy at Orange Grove markets, he's there every Saturday and a whole lot cheaper than David Jones/Blackwattle Deli.
He usually has Roquefort, Pont Levaque, D'affinois plus a couple of others on rotation. Prices around $10 - 20 per kg less than the stores plus his cheese is always ripe and ready to eat AND they give you a taste before you buy. :love:

I find quince paste overpowers the awesome flavours of cheese for me.

Check it out especially the great fetta and to die for freshco pecorino from the Country Valley stall. That frescho just melts on all things delish. I chill out and listen to music - heaven delight!

Hiya that cheese sounds fantastic!! Don't know if I would pay $110 a kilo though.
I lvoe the fresco pecorino from Eveleigh markets its only $45 per kilo and they have them in smaller packets for around $10 bucks. "Gooey crack" does sound rather good though.
I have a Bro who lives in Melbourne so will have to check it out when I visit him later in year.

Does anyone have any terrific non standard ways to serve cheese?

What are you kidding, or maybe that fresh cream cheese in a cake with icecream.
What other ideas. I like to serve cheese, have done a lot of melts and cheese boards with a variety of fruits and vegs. In food you can put slices of fresco pecorino into your chicken fillet breasts - its the real deal.

Yummo that sounds great. fresh tabouli is the best. You can buy all that from your local growers markets and support the farmers direct rather than Woolworths or Coles who screw them down. Crusty bread I make my own.
