Try Reason by Propellorhead software if you enjoy tweaking knobs.

If you arent set up with MIDI the options are limited but you can still make tracks...
ACiD is not bad, lets you drop in pre-cut loops (4, 8, 16, 32, 64 beats etc) and set BPM and PITCH independantly so u can compress and strech samples. It comes with a loop CD but I wouldnt count on it having much good stuff.
ReBirth is pretty good. If you like to tweak you'll love it. Great acid sounds, a bit of noise and other stuff, and you can get mods to change the sound of the 808 and 909 drum emulators. You can export a loop from ReBirth into ACiD since the ReBirth song creation system is a little tricky if you dont have a midi keyboard to change patterns for you.
I'd reccomend trying out using ReBirth and Hammerhead to export into ACiD where u can mix'n'match and play with things. You can get a demo of ACiD and ReBirth... just search for them...
Of course if you have a synth or a drum box you can record them into your PC using your sound card, cut the beat up to loop properly then dump it into ACiD
Theres heaps of programs out there, just keep looking, try demos and see what you like.
I'd reccomend going to www.intermusic.com they have a good directory of music programs that you can download. www.samplenet.co.uk is not a bad place to get samples to drop into ACiD, although I'd strongly reccomend having a WAVE editor such as Sound Forge or GoldWave to edit samples so they loop properly.
Hope this helps ya
