I use nature as an air condition but if your point is you can't really eat like that if you're hiking for 6 days down a gorge then yes... you are right of course. I'd be eating dehydrated food stuffs and drinking goon most likely.

Basically you turn your oven on max with a cast iron grilling pan inside it. Once it gets hot, seal your steak in a second pan on top of the stove for a minute each side, and then transfer the steak into the cast iron grilling pan inside the oven and cook on each side for 2 minutes (or longer if you don't like it so pink as above), and then after it's done rest it in foil for a couple minutes to settle the juices.

sealing a steak then finishing in the oven is pretty common in restaurants anyway...especially with a thick steak. not sure about needing to heat pan and flip steak in oven though ....why not just seal then put that pan in oven with steak.

I tend not to use recipes. All that reading and getting things right does chew up time. There should be a reading and re-reading recipe time factored into recipes.

I also don't dent wine. I down the whole bottle.

Lamb marinated in mint, garlic, anchovy and lemon juice. Potato and onion gratin served with an italian salsa of tomatoes, parsley, spanish onion and diced sourdough.



Italian salsa



Puff pastry, rosewater and vanilla cream served with figs stewed in caramelised cinnamon and orange juice, topped with almond slivers.



Duck breast served on a bed of sweet potato, black lentils and baby spinach topped with beetroot and orange relish and basil infused olive oil.



Home made cold smoked bacon



Mediterranean inspired potato salad, insalata caprese and veal fried in sage butter



Pontiac potato salad with a sauce of mashed anchovies, parsley and olive oil then sprinkled with preserved lemon and finely chopped chives.

Last weekend was all about quality produce. It's a bit epic but hopefully inspiring.

Lamb loin from the local gourmet butcher marinating in anchovies, mint, parsley, garlic, lemon juice and olive oil.



Finished product served with insalata caprese (ingredients sourced from Fratelli Fresh and our garden.



Kalamata olive sourdough from Sonoma with pepe saya butter



French cakes from Pattise. Stunning.



Sonoma sourdough, poached eggs from our chooks and smokey home made bacon



Duck and orange terrine, prosciutto and gherkins from Victor Churchill (the prosciutto was $400 per kg... WTF? Seriously good prosciutto), St Agur from Australia on a plate, tomatoes from fratelli and Sonoma sourdough.





Crazy purple sapphire potatoes



Roast chook with awesome stuffing, dutch carrots from Fratelli, peas, sapphire potatoes roasted in himalayan pink salt and thyme and the obligatory pan juice gravy.

Think this is the first time I've photographed my food (was mostly to annoy a friend)...
But I'm getting pretty keen on Osso Bucco



Pretty stock standard... whacked in whatever.

Carrot/celery/leek/onion/capsicum + stock + seasoning + tomatoes + thyme/bayleaves/chilli & gremolata on top. (first time doing it, not sure if keen or not)

Banged in on some purple sweet potato -- first time using it, and had no idea its white inside

too many of you guys are getting far too good at taking food shots



pork belly from taste.com.au recipe which turned out quite well for the first attempt at it (and pork belly generally)

the spuds were a last minute idea when i didn't feel like a salad would be right with it. wine is pertaringa over the top Shiraz. (yes i know it's in a Yangarra wine glass, which i am loving the stemless lately)
