The thing with red meat, if you keep it air tight and cooled, it lasts for fucking ages. Some of our stock when I used to work in cold storage would sit around for a couple of months before we sent it out. It was all cryovacced and kept at 0-2 degrees. When the meat ages that much it just becomes super tender.

Incorrect Aircon, freezers go much lower than that, dry ageing meat is done at zero degrees (with uv lights and fans n stuff though)

a customer sent me a pack of bean boozled jelly beans (knock offs of bertie bott's every flavoured beans) with some stock.

i'm about 6 gross ones vs 1 nice one so far. i've eaten centipede, rotten egg, baby wipes, toothpaste, vomit and baby wipes. they're so fucking awful but i keep going back for more.

It takes 2 seconds, so good to drizzle over steamed shiz or a rice dish or something (not that I go for rice)

Ponzu
1 tbsp jap soy sauce (I used ayam as it gluten free)
1/2 tsp mirin
2 tsp rice vinegar
1 tsp strained freshly squeezed lemon juice
1 tsp strained freshly squeezed orange juice

Makes about 2 tablespoons. Going to be living off steamed chicken and veg with this shiz on it for the next few months trying to cut down a bit

Cool, try this one really easy. Don't know how it compares to yours flavour wise

I've made it once by straining the juice thru a small cocktail sieve and last night I didn't strain it, made no difference to the flavour

The straining is for removing the lumps of katsuobushi flakes and seaweed (if you do the heating it together method)

I've seen a few different ones - last one I used called for the katsuobushi flakes (its like dried tuna stuff). May or may not be worth the extra effort.

Lemon juice, habanero paste and thyme, went awesome. Way too hot though. I can see the steam every time I exhale now probably helps that my apartment is an ice block.
