Sorry for the crappy phone pics...

Lamb chops on a garlic bean mash with roast vege's...


This is before i chucked it in the oven. Roast chicken breats wrapped in pancetta with leek, zuchinni and asparagus. Cooked in white wine, a nob of butter and thyme.


Pizza with fresh tomato, proscuitto, rocket and boconcinni.

cook pasta as per directions
stir through basil pesto (we used store-bought)
add some rocket, halved cherry tomatoes, sliced cucumber and shaved parmesan
stir well
allow to cool
eat

I forgot to photograph last night's dinner.

Garlic olive oil, tomato and basil bruchetta and crusty bread wiith olive tepanade.

This was a Thai beef salad with glass noodles, watercress, coriander, mint, cucumber, spanish onions and a sauce made from a bunch of stuff.

Tortellini Bake:





Tortellini with a basic tomatoe/garlic/basil sauce, baby spinach, big dollops of ricotta, mounds of tasty and parasem. Really easy and yum!

Here's my surf and turf from last Thursday with a salad of home grown lettuce, coriander and parsley with pine nuts.





And a basic spagetti marinara. By basic I mean quick and without mussels and scallops etc. I more or less just threw some prawns, salmon, calamari and other fish bits together with a tomato, onion and garlic sauce base... and added parsley at the end.

Salt
270g dried udon noodles (i used organic)
20g dashi stock powder (japanese soup stock - available in 10g sachets)
6 cups boiling water
3 tbsp mirin (a japanese rice wine)
350g mixed mushrooms (trimmed &amp; wiped clean)
4 green onions (shallots) trimmed &amp; sliced thinly
300g silken tofu - drained &amp; diced
seven-spice seasoning to serve

1. bring large saucepan of lightly salted water to boil, add noodles and simmer over medium heat for about 10 minutes till al dente (cooking time will vary according to the type of udon noodles you use - the organic ones I use take roughly 10 minutes to cook). Drain well, refresh under cold water and set aside.
2. combine dashi powder, water, soy sauce &amp; mirin in saucepan. Bring to boil, then simmer gently over low heat for 5 minutes. Add mushrooms and simmer for a further 5 minutes, add onions, tofu and simmer for another 5 minutes.
3. meanwhile boil a full kettle of water. Pour boiling water over noodles, divide noodles among serving bowls and add mushroom soup. Serve sprinkled with a little seven-spice powder.

tonight's dinner: balsamic lamb and asparagus salad with haloumi...I should've cut the haloumi a bit smaller but oh well. It was DELICIOUS and it was so massive I only ate half, so now I have lunch tomorrow!

Haloumi tastes like awesome. It's hard to really compare to any other cheese until you have tried it, but if i had to describe it I would say it's a slightly more salty version of mozzarella that has been fried into chewy goodness.

1kg butternut pumpkin
1/3 cup extra virgin olive oil
salt &amp; freshly ground black pepper
450g dried penne pasta
2 garlic cloves chopped finely
pinch (HA!) dried chilli flakes (i use a weenie bit more than suggested)
1 tbsp chopped fresh sage (again I use more than recommended)
1/4 cup freshly grated parmesan

Preheat oven to 230 Celcius - peel pumpkin, ditch the seeds and cut into 2cm or so cubes - mix with some oil, salt &amp; pepper - pop in a tray and roast for 25 minutes or until tender

cook penne until al dente

Heat oil in frying pan add garlic, chilli flakes &amp; sage - cook for a couple of minutes until everything is soft - stir through pumpkin, pasta &amp; parmesan

serve with extra parmesan
I also served with a salad
(please note the Rainbow Lorikeet is NOT a salad ingredient - he's just curious about things)

just chicken...use chicken thighs as breast meat dries out.
along with the coconut milk i add about 2 table spoons of tomato paste which adds smoe sweetness to it. sometimes i use tinned chopped tomatos instead of stock.

id simmer for a min 30mins to tenderize the chicken a bit.

This is a really crap pick coz I was way tired and feeling way unwell and way over it but anyway... Last night's vego was grilled eggplant, mozzarella, tomato and pesto stack topped with roast capsicum and balsamic and served with a side of crispy taties with paprika.

Krafty, I drool at all your food but I just have to ask how you get your potatoes like that? Do you boil then for abit first and then bake them or do you just throw them straight in the oven? Also do you slice the tops before or after cooking? I'm assuming you put the paprika on before baking??
