Went for Malaysian with work colleagues today. Had veggie spring rolls and lamb curry with roti.

Lamb curry was WAY too oily and I feel slightly ill now.

salad with baby spinach, smoked chicken breast, cherry tomatoes, corn, chickpeas and a homemade honey mustard dressing. very easy, tasty and keeps me full until dinner.

There are some other things I can have but it is just an issue of finances for now! I am on a really really tight budget so I just go with what is cheap and what will fill me up! This way I don't feel like snacking in the afternoon!

Made a big batch of pasta last night- packed with chorizo and chilli
Muscat admitted after the grand final loss to Sydney FC last month that he would be haunted for some time for sending his spot kick into the post, a miss which helped Sydney claim the championship.

Lunch today is Harira- Moroccan soup with slow cooked lamb, chickpeas, tomatos, ginger, harissa, cinnamon, lentils, coriander etc. Actually got myself organised last night to cook lunches in advance! Go me!
The drinks were few and the people many. It was everything I expected and less.

that's always my trouble. If I bring food to work I literally cannot stop thinking about it from the moment I sit down at my desk. It usually doesn't make it past 10:30 and I end up spending money on lunch anyway!

monday: salami and salad wrap
tuesday: veal schnitzel and cheese sandwich
today (back at work): salad consisting of eggs, beans, capsicum, carrot, parsley and a dressing of mustard, oil, red wine vinegar, and garlic

Chorizo, mushroom & spinach penne

Preparation Time - 5 minutes

Cooking Time - 15 minutes


Ingredients (serves 4)

* 350g dried penne pasta
* 1 tbs olive oil
* 2 chorizo sausages,
* thinly sliced diagonally
* 200g button mushrooms, thinly sliced
* 1 garlic clove, crushed
* 1 x 400g can diced tomatoes
* 100g baby spinach leaves
* Shaved parmesan, to serve

Method

1. Cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente. Drain.
2. Meanwhile, heat the oil in a large frying pan over high heat. Add the chorizo and cook, turning occasionally, for 3-4 minutes or until brown. Add the mushroom and garlic and cook, stirring, for 2 minutes or until mushroom is tender. Add the tomato and cook, stirring, for 2 minutes or until the sauce boils and thickens slightly.
3. Add the pasta to the tomato mixture and gently toss to combine. Add the spinach and gently toss until just wilted. Taste and season with salt and pepper.
4. Spoon the pasta among serving bowls and top with shaved parmesan. Serve immediately.
