Jerky, Biltong etc
Who likes dried meat?

I love a good bit of spicy jerky. Quite partial to a nice bit of biltong too (had some very nice venison biltong once)

has anyone had a go at making their own?

Success or failure? any tips?

We used to hang ours in the garage to dry when I was little.

Tips: Cut with the grain. Don't leave the salt on for too long, an hour is perfect. Apple-Cider vinegar is the best to use. Be careful where you dry it, if the air is humid then the meat will spoil.

Just buy a food dehydrator, dealsdirect has decent ones for an ok price, i like cutting mine at about 1/4 of an inch ive used the masterfoods range of sauces and marinated for about 1-2 days, then using the dryer for about 14 hours turn once at around halfway,

Thick tasty chewy jerky FTW!

Nup sorry, not into dried out meat that looks and tastes like leather! The biltong I tasted years ago put me off for life!

have been eating this one: http://choicebeefjerky.com.au/ as it doesn't have msg/flavour enhance 621 in it

need to get around to making my own as i have a dehydrator, i just haven't used it yet.

class - what cut of meat do you use for your jerky?

i've heard you can do salmon jerky too - any one tried it?

it's in St iVes, walk in there and there is a whole ceiling full of biltong! the old diggers there are experts too, you can get it exactly how u want it! wet dry fat on, cut, whole, ground. and they also sell heaps of wicked bastes and marinades for meat too which is extra win

yeah just follow the south africans. St Ives definitely but closer to the city you could try Rose Bay and surrounds.

Havent used any good cuts of meat just picked up a big chunk of it from woolies, about 10 bucks for a kilo or so, its pretty much in a block of meat, not your normal shaped steak, which I would recomend for your practice runs, also slightly freeze it for easier cutting.

Also remember that it decreases in size by about 2/3rds, so 900g turns out to be 300g of jerky.

Bumping this thread.

My mother is South African and honestly makes the best Biltong I've tried. I do enjoy the "fast food" varieties available in SA, but nothing surpasses home-dried Biltong.

I'm going to try a 10kg "wet" batch myself sometime soon, apparently Silverside is the way to go (fat on).

I found some salmon jerky at asian supermarket today. just ate it...pretty nice. hope its ok though.....i just ate fish that's been sitting at room temp for days.

Mate introduced me to Biltong the other weekend, this stuff.



...holy mother of God it's goooooooooood, the Peri Peri stuff, haven't tried traditional.

Didn't think I'd like it, tried beef jerky a few times and it's always been horrible, though it's the packaged stuff from the supermarket, possibly better stuff out there.

Anywho...praise to the best thing to come out of South Africa!

Anyone know stockist of the above brand (Protea) in Melbourne? Only place I've seen it is Duncans Liquor in Richmond, but at $16 a 200g tube, it's pretty fucking pricy stuffs!

Yeah, google searching wasn't that helpful...found a few other SA food supply places, but all equally as expensive per KG, plus you gotta gets it delivered.

Have emailed Protea direct to see if they can hook us up a list.

The traditional biltong looks more like beef jerky, compared to how the Stokkies look...still $70 a KG...dry salted meats not cheap!

The south african shop in the St Ives mall used to be good for this kinda stuff. They did an absolutely killer land jaeger (heavily spiced, dried sausage) too.
When I was back in NZ there was this farm gate shop at an orchard that did awesome biltong and drywors, very well priced too.

We're pretty lucky in QLD, there's a chain of kiosks in a few our Westfields that stock a good range of jerky and biltong... it's a mandatory stop every time I go shopping

Fucking pissed off. Drove out to Arsefuck, New Mexico (okay, so it was only Camberwell to Templestowe, but that was an hour of my Sunday that could have been better spent getting lagered) to visit the South African Shop and buy a kilo each of biltong and stokkies, and the bastards were closed.

If you get desperate you can ebay Jerky and Biltong from Australian manufactures, some do free samples if you send them a self address envelope.

Go to Bianca's Grub Store in Rose Bay. Saffa shop... she has dried and semidried biltong of a few different sorts.

We've made friends with some South Africans who obviously LOVE their biltong (they also love a good brai) so every time they have someone visit I've been getting a few bags of the good stuff. My god it is next level shit!!

Sounds like you must be buying those poxy 25g/50gm packets.
Find a good butcher that makes their own biltong and you'll love them forever. Trust me. If you can find quality snap sticks that's even more win, a decent snap stick should last you hours. They're like a dog chew toy but for grown men, it's brilliant!

Nah the 100g packets from that site I linked, but it still goes quick. I'm the type of person where if I open a bag of chips or biscuits, I have to eat the whole bag Jerky is no exception to the rule!
