making use of the bbq tonight

Lemon Thyme and garlic chicken breast
Chunky angus mustard snags
corn on the cob
Roast taties with rosemary and garlic
Crunchy Asparagus and snow pea salad with hazelnuts and an orange juice/oil dressing

stir fried banana and peaches with orange zest and ginger cordial w/ vanilla icecream for dessert!!

I'm in my final 2 weeks of living here, so need to use up everything in the freezer.

Tonight will be baking up some ocean trout fillets in some garlic, lemon and pepper. Side of bashed chats and steam beans & carrots.

My flatmate has put me onto the Weight Watchers site as we attempt to become a slimmer household.

Tonight - Cottage Cheese and Tuna Pasta Salad.

I substituted the sundried tomoatos for normal tomatoes, and also added some cheese and olives. The light dressing I used was ranch.

SOOOOO good.

chicken noodle soup was awesome as well. Im about to go buy some stuff to make banana bread and banana and chocolate chip muffins. in case you were wondering.. there are a lot of bananas lying around, maybe i should be making banana pie instead

Pied de Cochon (feet of the pig)

Yesterday I went to the butcher and got 5 pig's trotters, and simmered them for 3 hours with some carrot, leek, peppercorns, thyme, garlic and bay leaves. After the 3 hours I removed the trotters and deboned them, then chopped all of flesh, skin etc up fine and mixed with some salt, pepper, dijon mustard, fried shallots and a bit of the stock. I then packd the mixture into 4 small dessert dishes and put them in the fridge to set, so I've now got 4 neat discs about the size of a small pie. Tonight I'll coat them in breadcrumbs and oven bake them til crisp on the outside, and serve them with a dressing of parsley, egg, gherkin, olive oil and vinegar. SHould be interesting at the least!

and yeah i topped mine with thinly sliced pork (gave em a quick stir fry first) and another 2 with seafood (marinara mix - a few squid rings)

i took them over to a friend's house & noone had had them before and everyone enjoyed

i miss Japan and the restaurants where they have the built-in hot plates in the tables and you cook okonomiyaki yourself...

I made a pretty mean lasagne last nite - so tonight is leftovers - huzzah!

I was going aisle to aisle yesterday trying to think of dinner for the next few nights and im like i kinda feel like nachos but trev will want meat...MEATY NACHOS = WIN

mmmmm meaty

i think i'm doing steak and garlic roasted kipfler potatoes. was meant to try and make a red wine reduction but i couldn't find any redcurrant jam. possibly substitue it for plum jam? i dunno

With jams its just depends on how sweet you want it to come out tasting, id recommend plum for steak though!!! its definitely more savory!

You should be able to find redcurrant jelly in any supermarket. Have a look in the sauces section, near the cranberry sauce. (Not with the jams/peanut butter etc.)

Cumberland sauce, after the Duke of Cumberland. Try with a little orange peel zest and deff the Red Currents.Port was often the call for this reduction , mostly used with game.Very tasty.
I feel like some thing light to eat , like Borscht.Shopping for beets then.Allways after good beets, now what to listen to while i eat?

yeah i figured plum would be pretty much the next closest flavour? also considered blackcurrant, but decided against it.

cheers eddie, that's what i thought, i looked in both sections but nada there was plenty of cranberry and apple sauces but i could not for the life of me find any redcurrant jelly. i was looking in coles so thought surely they would have it! maybe i should try a different supermarket
