I'm road testing it with a chilli con carne now, about 800g of meat, a can of tomatoes, an onion and some chillis, is a bit under 1/2 full.

@Brad, no worries, I reckon you could get 3 or 4 in if they were frenched.

They also had some pretty nice 8 setting 18/10 stainless cutlery sets for $50, would be a good score if I didn't already have a schmick Tablekraft set.

GOULASH: Stew

1kg beef - best mixed cuts eg. shin, chuck, silverside eye
1/4 cabbage head
2 medium red onions
1/4 cup vinegar (best white / apple cider/ malt mix)
1 red chilli
2 tbsp butter
1 tomato
3 cloves garlic
Sweet Hungarian paprika


Roughly chop onion and finely chop garlic
Heat a pan to medium high, add olive oil, plenty of salt and pepper
Sautee until onion softens and begins to lose colour -- do not brown

Roughly chop beef to medium (1.5-2 cm) chunks
Add to pan
Immediately add 3-4 tablespoons of sweet paprika
Brown meat slowly -- continually stir (about 3 minutes)

Finely chop tomato, add to meat as it browns
Remove stalk from cabbage, peel top 'green' layers (outer 4-5 layers), chop roughly
Add cabbage to pan, stir through meat

Add 1 tsp of salt
Add 1/4 cup vinegar
Add 1 cup water
Let simmer 5 minutes

Reduce heat to medium

Taste.

Add butter, add chilli (whole or chopped, if whole, slice down middle to open)
Add 1-2 tbsp paprika to taste
Salt & pepper to taste
Add 1 tsp Vegeta (vegetarian) if possible
Simmer for 10 minutes

Taste. Season as necessary.

A. Reduce heat to low-medium (ie. 3/10)
Add 1/2 cup water
Simmer for as long as necessary (cover on)

(Alternatively)

B. Transfer to oven-friendly pot
Ensure oven is preheated to 140
Add 1 cup water
Cook in oven for 2-3 hours, checking every 30 mins for sufficient liquid

Serve with polenta, bread, rice, or mashed potato.

ALTERNATIVE OPTIONS
Finely chopped red capsicum
Bay leaf
Thyme
Celery
Chopped potato
Replace a portion of cabbage with sauerkraut

For soup version... add soup vegetables such as celery, root vegetables, etc., and add more water / vinegar / Vegeta

ADDITIONAL NOTES
Goulash should not taste tomato-based.
Recommend addition of osso busco / bacon bones for richer flavour

Settle petal.

Daube of beef cheeks

Spoiler:
Serves 4

50 ml olive oil
4 beef cheeks (250g each), trimmed
1.5L red wine, 500ml port (or just 2L wine)
1 carrot, peeled and chopped
1 onion, peeled and chopped
1 stick celery, chopped
4 cloves garlic
5 sprigs thyme
1 spring rosemary
1 bay leaf
150g speck, diced
1 tsp cracked white pepper
30ml brandy
Zest of 1 orange
40g butter
8 baby carrots
8 baby leeks (white parts only)
10og mushrooms (no stalks)

Allow 3 days

Day 1:

Heat oil in frying pan over high heat. Brown cheeks on both sides, remove and set aside


In a pot over a high heat, bring wine and port to boil and then light it. Allow to burn out and then cool.

Place beef, carrots, celery, onion, garlic, herbs, bay leaf, 50g speck into wine, cover and refridgerate overnight

Day 2:

Preheat over to 180 degrees

In cast iron pot, bring cheeks and marinade to a simmer, cover and cook in oven for 4 hours. Allow to cool and refridgerate overnight

Day 3:

Bring cheeks and marinade to a simmer. Add brandy and zest.

Cover and cook in 180 degree oven for 2 hours. Remove cheeks and set aside.

Ladle out ½ cooking liquid and combine with butter and cook baby carrots, leaks, mushrooms and remaining speck in a pot on medium heat until softened.

Serve with mash potatoes
